What does it mean when you add i- in front of a word like i-sulat for example or i-cultivate I see that often in conversations

i- is a style of verb conjugation...they're usually object focus.
The most common conjugation types are: -um-, mag-, ma-, -in, -an, and i-.
 
Example conjugation:
ibigay, ibinigay, ibinibigay, ibibigay
 
Example sentence: Ibigay mo ang cellphone mo sa amin. = Give your cellphone to me. (focus on the object "ang cellphone").

Also, you'll often see Tagalog words for nouns when the root begins with an "s," where they'll add an "i" to the beginning...
 
Ex:
istasyon (station)
iskedyul (schedule)
istruktura (structure)
etc.

Benefactive is what I hear the i- prefix called. Often confused with the locative -an suffix in speech and by non-Tagalogs (most languages south of Manila don't have this trigger).

My text book says that although i- has many meanings, the most common usage is to do something for someone else.
Ibinili ng babae ng isda ang kanyang ina. The woman bought fish for her mother.
Ibanasa ng aklat ng guro si Joe. The teacher read a book for Joe.
Iniluto niya ang pagkain para sa anak. She cooked the food for her child.
Quite which part of the sentence becomes the subject requires a post-graduate degree in logic and is way beyond me! It depends upon whether the verb is normally um or mag. To quote, "When it is um (as in the first sentence above), the indirect object becomes the subject. When it is mag (as in the third sentence), the direct object becomes the subject. When it can be both (as in the second sentence), the first of these two is used."

In that particular example, "I-sulat", "I" represents conjunction that gives "command or instruction"
Example: 1. "Isulat" mo ang iyong pangalan. " means "Write" your name.
2. i-bigay. "Ibigay" mo yan sa akin. - " Give it to me!"
 
I-cultivate, for instance, is only just an example of how Filipino uses "Taglish" (Tagalog-English) in a sentence.
